American Pancakes

Ingredients

  • 135g plain flour
  • 1 heaped tsp baking powder
  • Pinch salt
  • 2 tbsp caster sugar
  • 130ml milk
  • 1 large egg
  • 2 tbsp melted butter
  • Blueberries, chocolate chips

Method

  1. Melt the butter and allow to cool slightly. Add 130ml milk and 1 large egg; whisk until smooth and well-combined.
  2. Add the flour, baking powder, salt, and caster sugar. Whisk well until you have a smooth batter. Let the mixture stand for a few minutes.
  3. While the batter stands, preheat the hob. Don’t go above setting 5 or 6 as otherwise the pancake will burn.
  4. Grease the pan with a little oil or butter; cook the pancakes a ladle-full at a time. Add blueberries / chocolate chips as soon as the batter hits the pan. Flip when bubbling up and starting to set. Cook until golden on both sides and serve with maple syrup.
