Apple Muffin Cake

Ingredients

  • 270g gf self raising flour
  • 2 tsp bicarbonate of soda
  • 135g wholemeal flour
  • 2 tsp xanthan gum
  • 3 tsp ground cinnamon
  • 180g oats
  • 200g soft brown sugar
  • 4 eggs
  • 1 cup natural yoghurt
  • 3 tbsp milk
  • 240ml apple juice
  • 2 pears, peeled and chopped
  • 1 apple, peeled and chopped

Method

  1. Mi together the flour, bicarbonate of soda, sugar, cinnamon, oats and xanthan gum.
  2. Tip in the fruit and gently mix it in.
  3. Mix in eggs, yoghurt and milk, followed by the juice.
  4. Tip into a greased bundt tin and bake at 180c for an hour or until a knife or skewer comes out clean.

N.B. makes a very large cake - alternatively, you could add sultanas and make mini muffins. It's quite a muffin-y texture because of the porridge oats.
