Apple Muffin Cake

Ingredients
- 270g gf self raising flour
- 2 tsp bicarbonate of soda
- 135g wholemeal flour
- 2 tsp xanthan gum
- 3 tsp ground cinnamon
- 180g oats
- 200g soft brown sugar
- 4 eggs
- 1 cup natural yoghurt
- 3 tbsp milk
- 240ml apple juice
- 2 pears, peeled and chopped
- 1 apple, peeled and chopped
Method
- Mi together the flour, bicarbonate of soda, sugar, cinnamon, oats and xanthan gum.
- Tip in the fruit and gently mix it in.
- Mix in eggs, yoghurt and milk, followed by the juice.
- Tip into a greased bundt tin and bake at 180c for an hour or until a knife or skewer comes out clean.
N.B. makes a very large cake - alternatively, you could add sultanas and make mini muffins. It's quite a muffin-y texture because of the porridge oats.
