Apple and Oatmeal Cookies

Ingredients
- 270g unsalted butter, softened
- 160g caster sugar
- 160g soft light brown sugar
- 2 large eggs
- 1 tsp vanilla essence
- 380g plain flour
- 1/2 tsp salt
- 1/2 tsp ground cinnamon
- 1 tsp bicarbonate of soda
- 2 Granny smith apples, cored and peeled, grated
- 120g rolled oats
Method
- Preheat the oven to 180C.
- Cream together the butter, sugar and vanilla until smooth. Add the egg and mix on a low speed until combined.
- Sift together the flour, salt, cinnamon and bicarbonate of soda, then add these dry ingredients to the creamed mixture in two batches and mix thoroughly. For the first batch you can use the mixer; for the second you are better off switching to a wooden spoon.
- Grate the apples and squeeze out as much liquid as you can then discard the liquid. Add the grated apple and the oats to the cookie dough and stir in by hand.
- Break off pieces of the dough about 2 tablespoons in size and roll into balls. Place on the baking sheets leaving space for them to spread.
- Place in the oven and bake for 15 minutes until the cookies are a light golden brown. Leave on the hseets for 10 minutes then remove to a wire rack.
- Makes about 30 cookies.
