Ingredients
- 1 large granny smith apple
 
- 
1/2 tsp cinnamon
 
- 
1 egg
 
- 2 tbsp melted butter
 
- 1 tsp vanilla
 
- 
3/4 cup milk
 
- 
1 cup flour
 
- 2 tsp baking powder
 
- 1/2 tsp cinnamon
 
- 
Pinch Salt
 
- 
Plenty of maple syrup
 
Method
- Peel and core the apple, then slice into rings approx 5mm thick. Put in a bowl and sprinkle over the cinnamon; stir to coat evenly.
 
- Place the egg, melted butter, vanilla and milk in a bowl and whisk for a few minutes by hand until well combined.
 
- Weigh out the dry ingredients into a separate bowl (flour, baking powder, cinnamon and salt) then sieve into the wet ingredients. Whisk until smooth.
 
- Preheat the frying pan and turn down to a low heat. Rub with a litle oil or butter.
 
- Dip each apple ring into the batter; ensure it's coated on both sides and any excess has dripped off then place in the hot frying pan. Cook like a normal pancake; flip halfway through cooking.
 
- Serve in a stack with plenty of maple syrup.
