Apple Pancakes

Ingredients

  • 1 large granny smith apple
  • 1/2 tsp cinnamon

  • 1 egg

  • 2 tbsp melted butter
  • 1 tsp vanilla
  • 3/4 cup milk

  • 1 cup flour

  • 2 tsp baking powder
  • 1/2 tsp cinnamon
  • Pinch Salt

  • Plenty of maple syrup

Method

  1. Peel and core the apple, then slice into rings approx 5mm thick. Put in a bowl and sprinkle over the cinnamon; stir to coat evenly.
  2. Place the egg, melted butter, vanilla and milk in a bowl and whisk for a few minutes by hand until well combined.
  3. Weigh out the dry ingredients into a separate bowl (flour, baking powder, cinnamon and salt) then sieve into the wet ingredients. Whisk until smooth.
  4. Preheat the frying pan and turn down to a low heat. Rub with a litle oil or butter.
  5. Dip each apple ring into the batter; ensure it's coated on both sides and any excess has dripped off then place in the hot frying pan. Cook like a normal pancake; flip halfway through cooking.
  6. Serve in a stack with plenty of maple syrup.
