Bacon Fried Rice

Ingredients

  • 2 Portions Cooked Brown Rice
  • 4 or 5 rashers of bacon, sliced
  • 1 onion, chopped
  • 1 courgette, coarsely chopped
  • 3 carrots, diced
  • 1 clove garlic, finely chopped
  • Pinch chilli flakes
  • 3 tbsp Soy Sauce
  • Handful frozen peas
  • 1 Egg

Method

  1. Heat some oil in a large frying pan and add the bacon. Cook for a few minutes.
  2. Add the onions, courgette, carrots and chilli flakes. Cook for 10 minutes, stirring occasionally, until the vegetables are tender. Add the garlic and cook for an additional minute.
  3. Add the cooked rice and soy sauce to the pan. Fry for a minute then add the frozen peas. Fry for a further minute or two.
  4. Scrape the rice to the side of the pan and add some more oil. Add the egg and scramble it.
  5. Once the eggs are cooked, mix the contents of the pan together. Serve.
