Ingredients
- 2 Portions Cooked Brown Rice
 
- 4 or 5 rashers of bacon, sliced
 
- 1 onion, chopped
 
- 1 courgette, coarsely chopped
 
- 3 carrots, diced
 
- 1 clove garlic, finely chopped
 
- Pinch chilli flakes
 
- 3 tbsp Soy Sauce
 
- Handful frozen peas
 
- 1 Egg
 
Method
- Heat some oil in a large frying pan and add the bacon. Cook for a few minutes.
 
- Add the onions, courgette, carrots and chilli flakes. Cook for 10 minutes, stirring occasionally, until the vegetables are tender. Add the garlic and cook for an additional minute.
 
- Add the cooked rice and soy sauce to the pan. Fry for a minute then add the frozen peas. Fry for a further minute or two.
 
- Scrape the rice to the side of the pan and add some more oil. Add the egg and scramble it.
 
- Once the eggs are cooked, mix the contents of the pan together. Serve.
