Baked Gnocchi with Bacon, Tomato and Mozzarella

Ingredients

  • 250g gnocchi
  • 1 pack pancetta
  • 1 onion
  • 1 garlic clove
  • 1 tsp smoked paprika
  • 1 tin chopped tomatoes
  • 1 tbsp tomato puree
  • Handful cherry tomatoes, halved
  • 1/2 tsp sugar
  • 2 tbsp cream or yoghurt
  • Parsley
  • Salt, Pepper
  • Mozzarella and Cheddar cheese

Method

  1. Preheat the grill. Bring a pan of salted water to the boil.
  2. Fry the bacon until starting to crisp. Add the onion and fry until golden.
  3. Add the garlic and smoked paprika and fry for 30 seconds.
  4. Add the chopped tomatoes, cherry tomatoes and tomato puree. Add the sugar and simmer for 5 minutes.
  5. Remove from the pan, stir in the cream or yoghurt, parsley, and salt and pepper.
  6. Boil the gnocchi for two minutes until floating. Remove and add to the sauce.
  7. Dish into pasta bowls, top with cheese, and bake or grill until the cheese is melted and golden.
