Baked Gnocchi with Bacon, Tomato and Mozzarella

Ingredients
- 250g gnocchi
- 1 pack pancetta
- 1 onion
- 1 garlic clove
- 1 tsp smoked paprika
- 1 tin chopped tomatoes
- 1 tbsp tomato puree
- Handful cherry tomatoes, halved
- 1/2 tsp sugar
- 2 tbsp cream or yoghurt
- Parsley
- Salt, Pepper
- Mozzarella and Cheddar cheese
Method
- Preheat the grill. Bring a pan of salted water to the boil.
- Fry the bacon until starting to crisp. Add the onion and fry until golden.
- Add the garlic and smoked paprika and fry for 30 seconds.
- Add the chopped tomatoes, cherry tomatoes and tomato puree. Add the sugar and simmer for 5 minutes.
- Remove from the pan, stir in the cream or yoghurt, parsley, and salt and pepper.
- Boil the gnocchi for two minutes until floating. Remove and add to the sauce.
- Dish into pasta bowls, top with cheese, and bake or grill until the cheese is melted and golden.
