Baked Spaghetti Pie

Ingredients

  • 150g spaghetti
  • 100g chorizo, quartered
  • 200g cherry tomatoes, halved
  • 1 garlic clove
  • 1 onion
  • Parsley, Italian herbs
  • Grated cheddar / parmesan
  • White sauce
  • N.B home made white sauce per the recipe above for cheesy broccoli pasta bake, or a store bought alternative.

Method

  1. If using homemade white sauce, make the sauce, then set to one side.
  2. Cook 150g pasta in boiling salted water for 10 minutes then drain. Reserve half a mug of the cooking water.
  3. Return the pan to the heat and add some garlic oil, the onion, and garlic. Saute until golden then add the chorizo and stir for a few minutes. Add some parsley and Italian herbs. Add the halved cherry tomatoes and sauté for a couple of minutes until just starting to soften.
  4. Add the pasta and some of the cooking water; toss well to combine thoroughly. Pour into an ovenproof dish (red lasagne dish). Top with a thin layer of white sauce and a sprinkle of parsley, then sprinkle over some grated cheese.
  5. Place in a hot oven and cook for about 15 minutes until the cheese is golden and bubbly. Alternatively, leave to cool, then refrigerate. Cook for 45 minutes at 180C until the cheese is golden and bubbly.
