Beef Massaman Curry

Ingredients

  • 450g pack lean diced beef
  • 2 onions
  • Half a jar massaman curry paste
  • 400ml tin coconut milk
  • 250g baby potatoes, halved
  • 1 tsp brown sugar
  • Coriander to garnish

Method

  1. Heat the oil in a large deep oven safe casserole dish and fry the diced beef in batches over a high heat until browned all over. Remove with a slotted spoon and set to one side.
  2. Add the onions and fry over a medium heat for 5 minutes. Stir in the massaman paste and cook for 1-2 minutes.
  3. Return the beef to the casserole dish with the coconut milk and bring to the boil.
  4. Reduce the heat to a gentle simmer and cover and cook for 1 hour 30 minutes, stirring occasionally.
  5. Uncover the casserole and add the potatoes, sugar, salt and pepper. Cover and simmer for a further 45 minutes or until the beef and potatoes are tender.
  6. Serve with rice and garnish with chopped coriander.
