Beef Massaman Curry

Ingredients
- 450g pack lean diced beef
- 2 onions
- Half a jar massaman curry paste
- 400ml tin coconut milk
- 250g baby potatoes, halved
- 1 tsp brown sugar
- Coriander to garnish
Method
- Heat the oil in a large deep oven safe casserole dish and fry the diced beef in batches over a high heat until browned all over. Remove with a slotted spoon and set to one side.
- Add the onions and fry over a medium heat for 5 minutes. Stir in the massaman paste and cook for 1-2 minutes.
- Return the beef to the casserole dish with the coconut milk and bring to the boil.
- Reduce the heat to a gentle simmer and cover and cook for 1 hour 30 minutes, stirring occasionally.
- Uncover the casserole and add the potatoes, sugar, salt and pepper. Cover and simmer for a further 45 minutes or until the beef and potatoes are tender.
- Serve with rice and garnish with chopped coriander.
