Slow Cooker Beef on Rice

Ingredients

  • 400g stewing beef, diced
  • 1 litre stock, 2 beef stock cubes
  • 2 onions, chopped
  • 1 tsp Italian seasoning
  • Pinch salt
  • Pinch pepper

  • Few tsp cornflour + water to make paste

  • 1 tsp gravy powder

  • 180g white rice

  • Broccoli

Method

  1. Add the beef, stock, seasoning, and chopped onion to the slow cooker.
  2. Cover and cook on low for about 8 hours or high for about 4.
  3. Cook rice and prepare broccoli.
  4. About 10-15 minutes before serving, transfer to a large stock pot and bring to a boil, uncovered. Stir through the gravy powder and cornflour to thicken.
  5. Microwave the broccoli.
  6. Serve the beef / gravy over the rice, with a scattering of fresh parsley.
