Blueberry Bars

Ingredients

For the crumble: * 112g unsalted butter, melted and cooled * 70g plain gf flour * 1/4 tsp xanthan gum * 100g oats * 50g granulated sugar * 75g light brown sugar * Pinch salt

For the crust: * 140g plain gf flour * 1/2 tsp xanthan gum * 90g oat flour * Pinch salt * 1/4 tsp baking powder * 100g granulated sugar * 25g oats * 85g unsalted butter melted and cooled * 1 egg * 1 - 2 tbsp water

For the fruit layer: * 12 ounces fresh blueberries, rinsed and patted dry * 25g granulated sugar * 15g oat flour * Pinch salt

Method

  1. Preheat your oven to 160c. Grease and line a 9 inch square baking pan (glass oven dish was fine). Line with parchment so you can lift out the bars after baking.
  2. Make the crumble topping: combine all of the topping ingredients and blend with a fork until well combined. Place in the fridge to chill until ready to use.
  3. Make the crust: add the dry ingredients to a bowl and whisk to combine. Make a well in the centre and add the butter, egg and 1 tbsp water. Mix to combine. The dough will be a bit dry; knead it with your hands to help it come together. Add a few more drops of water if required.
  4. Transfer dough to the prepared pan and press firmly into an even layer on the bottom. Cover with another piece of parchment paper and smooth out the dough by pressing evenly. Place in the oven and bake for 10 minutes until the dough loses its shine and appears to set.
  5. Place the blueberries, sugar, oat flour and salt in a small bowl. Toss to combine.
  6. Once the crust has been parbaked, remove the pan from the oven and spread the blueberries out on top of the crust in a single even layer.
  7. Remove the crumble topping from the fridge and fluff it up with a fork to break it up into irregular pieces Sprinkle in an even layer on top of the blueberries and press gently to help it adhere to the blueberries in the filling.
  8. Return the pan to the oven and bake for 15 minutes until the crust is beginning to brown around the edges, a toothpick inserted into it comes out clean and the crumb topping is lightly golden.
  9. Remove from the oven and allow to cool completely before lifting the bars out and slicing. It may be easier to slice the bars once they've been chilled.
