Whisk the egg, egg whites, yoghurt, flour, and cinnamon together in a large bowl. Add the toasted bread and gently press it down so the slices soak up all the liquid.
Heat the butter in a large frying pan. Add the soaked slices of toast and fry for 2 minutes on each side, then transfer to a plate.
Meanwhile, in a small saucepan, combine the blueberries and maple syrup. Bring to a boil, then simmer for 2 minutes until soft and syrupy.
Spoon the blueberry mixture over the French toast and serve.
