Blueberry French Toast

Ingredients

  • 2 medium egg
  • 4 egg whites
  • 120g fat-free yoghurt (Greek or natural)
  • 20g plain flour
  • 2 pinch ground cinnamon
  • 4 slices of bread (toasted)
  • 2 tsp butter
  • 150g blueberries (fresh or frozen)
  • 40g maple syrup

Method

  1. Whisk the egg, egg whites, yoghurt, flour, and cinnamon together in a large bowl. Add the toasted bread and gently press it down so the slices soak up all the liquid.

  2. Heat the butter in a large frying pan. Add the soaked slices of toast and fry for 2 minutes on each side, then transfer to a plate.

  3. Meanwhile, in a small saucepan, combine the blueberries and maple syrup. Bring to a boil, then simmer for 2 minutes until soft and syrupy.

  4. Spoon the blueberry mixture over the French toast and serve.
