Broccoli Beef

Ingredients
For the Marinade:
- 1 tsp Soy Sauce
- 1 tsp Mirin
- ½ tsp Corn Flour
- Twist of Pepper
For the Sauce:
- 2 tsp Mirin
- 2 tbsp Soy Sauce
- ½ Chicken Stock Cube, dissolved in ¼ cup water
For the Beef:
- Long Grain White Rice
- 250g Beef
- 250g Broccoli
- 1 Onion
- 1 clove Garlic
- 1 tsp Corn Flour dissolved in water
Method
- Slice the beef thinly. Mix together the marinade ingredients, then add the beef and stir. Marinade for at least ten minutes. Put the rice on to cook (optionally with the other half of the stock cube). Put a wok or large frying pan and a saucepan on a medium heat. Fill and boil the kettle.
- Finely dice the onion and garlic. Prepare the broccoli in large florets.
- Add the onions and garlic to the pan. Fry until the onions are just starting to turn golden. Add the beef to the pan and fry until brown. Mix together the sauce ingredients.
- Put the Broccoli in a saucepan of salted boiling water. [Or microwave – 3 mins]
- Pour the sauce into the beef and bring to the boil. Add the corn flour paste. Simmer for a minute or two.
- After two minutes of boiling the broccoli should just be tender. Drain and add to the beef. Serve over the cooked rice.
