Caramel Apple Cakes

Ingredients

  • 8 ounces butter
  • 8 ounces caster sugar
  • 8 ounces GF self-raising flour
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 2 tsp xanthan gum
  • 1 tablespoon warm water
  • 2 granny smith apples, peeled and diced

  • For the icing:

  • 225g unsalted butter
  • 240g icing sugar
  • 1/3 jar salted caramel sauce
  • Pinch salt

Method

  1. Cream together the butter and sugar. Add the vanilla extract and cream well. Taste.
  2. Add the eggs one at a time and mix well.
  3. Measure out the flour. Peel and chop the apples. Stir a tablespoon of the flour into the apples to coat them, then set the apples to one side.
  4. Stir in the bulk of the flour and xanthan gum into the main mixture, and add 1 tablespoon of water.
  5. Gently stir through the apple pieces by hand.
  6. Bake at 180c for 20-25 mins until a toothpick comes out clean.
  7. Once cool, add all icing ingredients to bowl, beat until smooth, then ice the cakes.
