Carrot Stir Fry

Ingredients

  • 200g pork shoulder
  • 200g mixed colour baby heritage carrots
  • 4 spring onions
  • 1 tbsp teriyaki sauce
  • 1 tbsp runny honey

Method

  1. Chop the pork into small chunks and place int he wok with olive oil, salt and pepper. Srub, trim, and add the baby carrots (halving nay larger ones), then cook flor 12 minutes or until everything is golden, tossing regularly.
  2. While it's cooking, trim and slice the spring onions.
  3. Add a splash of water to the pan to deglaze it, then stir in the spring onions, teriyaki sauce, and honey. Cook for another 3 minutes, tossing regularly until it is all shiny and sticky, then taste, season to perfection, and serve.
