Cheese and Bacon Rolls (Harrods Bread)

Ingredients

  • 2 tsp yeast
  • 250ml warm water, between 37-40c
  • 1 tbs sugar
  • 160g gf self-raising flour
  • 200g gf plain flour
  • 1 tsp mustard powder
  • 1 1/2 tsp xanthan gum
  • 2 tsp salt
  • 3 tbsp olive oil
  • 80g Tesco finest smoked dry cure streaky bacon, cooked
  • 200g strongest cheddar you can find

Egg wash

  • 1 small egg
  • 1 tbsp milk

Method

  1. Activate the yeast: add sugar and yeast to the warm water in a glass bowl. Stir gently for a few seconds and let rest. The mixture will bubble and foam and smell yeasty - leave it for about 5 minutes. Put a lid over the top to keep it warm.
  2. Weigh and sieve together the two types of flour along with the xanthan gum and mustard powder.
  3. Once the yeast mixture is nice and bubbly (5 minutes) add in the salt, 2 tbsp of the oil, and half the flour.
  4. Mix the flour in well using the dough hook on the kitchen aid. once incorporated, add the rest of the flour a bit at a time. You want a dough that is firm, a bit sticky, but doesn't stick to your hands. Stop adding flour if it looks like it's getting too dry.
  5. Knead the dough into a ball, lightly coat it with the other tbsp of olive oil, and cover the bowl loosely with clingfilm. Let rest for an hour to prove.
  6. Pre-heat your oven to 180c.
  7. Once proved, lightly flour your workbench and turn out the dough. Flatten gently into a disc.
  8. Place some of the bacon and cheese onto the dough, then gently fold it over. Place more bacon and cheese onto this bit of dough, then fold over again. Continue until all of the cheese and bacon has been incorporated.
  9. Roll the dough into a log. You are now ready to start shaping. Usual method = cut into is equal pieces, then shape into a ball and place on a lined baking tray. Alternatively, consider plaits or whatever shape you like! The rolls are very rich; smaller is better.
  10. Mix together the egg and milk; brush over the rolls to get a golden crust. Bake them in the oven for 20- 25 minutes depending on size.
  11. Eat warm from the oven or freeze for another day.
