Cheese Fondue

Ingredients

  • 150g chopped gruyere cheese
  • 150g chopped camembert (rind removed where possible)
  • 100ml white wine
  • 1 tsp corn flour (made into a slight paste)
  • Half clove garlic
  • Twist of pepper
  • Pinch of nutmeg

  • To serve: cubes of bread (slightly stale works well); carrot sticks; sliced ham; cheese straws; crisps / crackers etc.

Method

  1. Put the fondue pot on the hob with the wine and heat until boiling. Allow to reduce a little then add the cheese and stir until melted. Add the garlic too.
  2. Turn down to a simmer. Add the cornflour paste, pepper and nutmeg. Once thickened, place the fondue pot over a flame at the table.
  3. Serve with cubed bread, crudites etc. for dipping.
