Pasta with Cherry Tomato Sauce

Ingredients

  • Olive oil
  • 1 onion, very finely sliced
  • 1 clove garlic
  • About 10 cherry tomates, halved (mix of red and yellow if available)
  • 1 tablespoon honey
  • 400g tin cherry tomatoes
  • 6 large basil leaves
  • 200g pasta of choice

Method

  1. Place the oil in a saucepan over a medium heat. If using onion, saute for 5 minutes. Then add the garlic. Once sizzling, tip in the fresh tomatoes and shake the pan. Immediately add the honey, salt, and pepper, and fry for about 1 - 2 minutes.
  2. Add the tinned tomatoes and basil and cook for 15 minutes, stirring occasionally.
  3. Meanwhile, cook the pasta in a large pan of boiling salted water until al dente.
  4. Pour over the cherry tomato sauce, stir everything together, check the seasoning, and serve with plenty of fresh parmesan cheese.
