Chicken and Sweet Potato Bake

Ingredients

  • 300g Sweet potato chips
  • 350g Chicken breast fillets
  • 1 tub Fresh tomato and basil pasta sauce
  • 25g Parmesan cheese, grated
  • 2 tbsp Chopped parsley

Method

  1. Preheat the oven to 200°C. Place the chips in the base of a shallow ovenproof dish and lay the chicken on top.
  2. Spoon over the sauce and sprinkle with the cheese.
  3. Bake for 25-30 minutes until golden and the chicken is cooked through with no pink meat.
  4. Sprinkle over the parsley and serve.
