Chicken and Sweet Potato Bake

Ingredients
- 300g Sweet potato chips
- 350g Chicken breast fillets
- 1 tub Fresh tomato and basil pasta sauce
- 25g Parmesan cheese, grated
- 2 tbsp Chopped parsley
Method
- Preheat the oven to 200°C. Place the chips in the base of a shallow ovenproof dish and lay the chicken on top.
- Spoon over the sauce and sprinkle with the cheese.
- Bake for 25-30 minutes until golden and the chicken is cooked through with no pink meat.
- Sprinkle over the parsley and serve.
