Chicken and Vegetable Fajitas

Ingredients

  • Red onion
  • 1 garlic clove
  • 1 Orange pepper
  • 8 cherry tomatoes (optional)
  • Celery (optional)
  • 1/2 tsp paprika
  • 1/2 tsp smoked paprika
  • 1/2 tsp oregano
  • 1/4 tsp cumin
  • Salt, pepper
  • Pinch chilli flakes
  • Tin chopped tomatoes
  • 2 chicken breasts, diced
  • Grated cheddar cheese
  • Rice and beans or tortilla chips

Method

  1. Prepare and chop the vegetables into strips.
  2. Saute all the vegetables; add the chopped chicken as well. Stir in the paprika, oregano, cumin, seasoning, and chilli flakes. Saute until the chicken is nearly cooked.
  3. Add the extra tin of chopped tomatoes and simmer until reduced and the chicken is cooked through
  4. Heat the fajita wraps and fill. Add a generous amount of cheese to each one.
  5. Serve with a mixture of spicy beans and rice or some tortilla chips.

Mexican Rice (optional accompaniment)

  • 1 onion
  • 225g white rice
  • 1 clove chopped garlic
  • Salt
  • Pinch cumin
  • 1 tin chopped tomatoes
  • 400ml chicken stock
  • Pinch coriander
  1. Saute the onion then ad the rice and stir until it begins to toast slightly. Add the garlic, salt, cumin, coriander, and stir. Add the tomatoes and chicken stock then turn up the heat to medium high. Bring to the boil then cover with a lid and simmer for about 20 minutes.
  2. Remove from the heat and fluff with a fork.
