Chicken and Bacon Chow Mein

Ingredients

  • 1 tbsp vegetable oil
  • 2 rashers of bacon, sliced into 1cm strips
  • 1 chicken breast, sliced into 1cm strips
  • 1 leek, trimmed, washed, and roughly chopped
  • 2 cloves of garlic, peeled and finely chopped
  • 50g frozen peas
  • 250g fresh egg noodles
  • 150g bean sprouts
  • 2 tbsp shaosing or dry sherry
  • 1 tbsp light soy sauce
  • 2 tbsp pine nuts

Method

  1. Heat the oil in a wok over a medium to high heat. When hot, add the strips of bacon and stir fry for 1 minute, before increasing the heat as high as it will go and adding the chicken. Stir fry for two minutes, until starting to colour and almost cooked through.
  2. Reduce the heat a little, add the leek and garlic and stir fry for 1 minute. Tip in the frozen peas and continue to stir fry for a further two minutes.#
  3. Add the noddles and bean sprouts and toss together. Pour in the shaosing and let it bubble up and almost totally evaporate before adding the soy sauce.
  4. Mix well then scatter over the pine nuts and serve.
