Chicken Parmesan

Ingredients
- 1 egg
- 1/2 cup breadcrumbs
- 1/4 cup grated parmesan cheese
- 1 tsp dried Italian herbs
- salt and pepper
- 2 tbsp oil
- 2 chicken breasts
- 1 jar tomato pasta sauce
- 1 pack mozzarella cheese, sliced
- 1 pack courgettini
Method
- Preheat the oven to 220°C. Crack the egg into a dish and beat. Mix the breadcrumbs, cheese, herbs, salt and pepper in another dish. Put a griddle pan on a medium-high heat.
- Cut the chicken breasts in half and flatten slightly with a meat hammer. Dredge the chicken in the egg and then in the breadcrumb mixture. Add to the pan and fry for 3-4 minutes each side until the outside is golden - they will finish cooking in the oven.
- Put the courgettini and 2/3 of the sauce in the bottom of a roasting dish, and then add the chicken on top. Pour the remaining sauce over the chicken and top with the sliced mozzarella.
- Bake until the cheese is golden and bubbly and the chicken is cooked through.
