Chicken Parmesan

Ingredients

  • 1 egg
  • 1/2 cup breadcrumbs
  • 1/4 cup grated parmesan cheese
  • 1 tsp dried Italian herbs
  • salt and pepper
  • 2 tbsp oil
  • 2 chicken breasts
  • 1 jar tomato pasta sauce
  • 1 pack mozzarella cheese, sliced
  • 1 pack courgettini

Method

  1. Preheat the oven to 220°C. Crack the egg into a dish and beat. Mix the breadcrumbs, cheese, herbs, salt and pepper in another dish. Put a griddle pan on a medium-high heat.
  2. Cut the chicken breasts in half and flatten slightly with a meat hammer. Dredge the chicken in the egg and then in the breadcrumb mixture. Add to the pan and fry for 3-4 minutes each side until the outside is golden - they will finish cooking in the oven.
  3. Put the courgettini and 2/3 of the sauce in the bottom of a roasting dish, and then add the chicken on top. Pour the remaining sauce over the chicken and top with the sliced mozzarella.
  4. Bake until the cheese is golden and bubbly and the chicken is cooked through.
