Chicken Teriyaki

Ingredients
- 2 chicken breasts
- Teriyaki marinade
- Salad onions
- Brown rice
- Chicken stock cube
- Peas
- Soy sauce
Homemade Teriyaki Marinade
- 4 - 5 tbsp soy sauce
- 1 tsp honey
- 1 tsp mirrin
- 2 tsp seasme oil
- 1 tsp dark brown muscovado sugar
- 1/2 tsp sesame seeds
- 1 crushed garlic clove
- 1/2 tsp ginger puree
- 2 tbsp water
- 1 tsp cornflour
(Optional: simmer for a few minutes to reduce and make a sticky sauce)
Method
- Use a meat hammer to flatten the chicken breasts. Generously apply teriyaki marinade and leave to marinate for about 15 minutes.
- Meanwhile cook half a mug of brown rice with 2 mugs water and 1 chicken stock cube- about 35 minutes.
- Preheat the grill; add the chicken and grill until cooked through and golden.
- Serve with a garnish of salad onions and some microwaved frozen peas.
