Chicken Teriyaki

Ingredients

  • 2 chicken breasts
  • Teriyaki marinade
  • Salad onions
  • Brown rice
  • Chicken stock cube
  • Peas
  • Soy sauce

Homemade Teriyaki Marinade

  • 4 - 5 tbsp soy sauce
  • 1 tsp honey
  • 1 tsp mirrin
  • 2 tsp seasme oil
  • 1 tsp dark brown muscovado sugar
  • 1/2 tsp sesame seeds
  • 1 crushed garlic clove
  • 1/2 tsp ginger puree
  • 2 tbsp water
  • 1 tsp cornflour

(Optional: simmer for a few minutes to reduce and make a sticky sauce)

Method

  1. Use a meat hammer to flatten the chicken breasts. Generously apply teriyaki marinade and leave to marinate for about 15 minutes.
  2. Meanwhile cook half a mug of brown rice with 2 mugs water and 1 chicken stock cube- about 35 minutes.
  3. Preheat the grill; add the chicken and grill until cooked through and golden.
  4. Serve with a garnish of salad onions and some microwaved frozen peas.
