Chocolate Fudge Brownie Cookies

Ingredients

  • 250g butter, softened
  • 1 teaspoon vanilla extract
  • 165g caster sugar
  • 165g brown sugar
  • 1 egg
  • 300g plain flour
  • 25g cocoa powder
  • 1 and ΒΌ teaspoon bicarbonate of soda
  • 175g milk chocolate
  • 175g white chocolate
  • 50g dark chocolate

Method

  1. Preheat oven to 180c. Line oven trays with baking paper.
  2. Beat butter, vanilla, and sugar in a small bowl until light and fluffy. Add egg and continue to beat.
  3. Stir in sifted flour, cocoa, and soda in batches. Stir in the chocolate.
  4. Roll level tablespoons of dough into balls. Place about 5cm apart on oven trays. Bake about 12 minutes and cool on trays. Makes about 48 cookies.
