Chocolate Fudge Brownie Cookies

Ingredients
- 250g butter, softened
 
- 1 teaspoon vanilla extract
 
- 165g caster sugar
 
- 165g brown sugar
 
- 1 egg
 
- 300g plain flour
 
- 25g cocoa powder
 
- 1  and ¼ teaspoon bicarbonate of soda
 
- 175g milk chocolate
 
- 175g white chocolate
 
- 50g dark chocolate
 
Method
- Preheat oven to 180c. Line oven trays with baking paper.
 
- Beat butter, vanilla, and sugar in a small bowl until light and fluffy. Add egg and continue to beat.
 
- Stir in sifted flour, cocoa, and soda in batches. Stir in the chocolate.
 
- Roll level tablespoons of dough into balls. Place about 5cm apart on oven trays. Bake about 12 minutes and cool on trays. Makes about 48 cookies.
