Chocolate Malteser Cake

Ingredients

  • 30g horlicks powder
  • 30g cocoa powder
  • 225g butter, softened
  • 225g caster sugar
  • 225g self-raising flour
  • 1 tsp baking powder
  • 4 eggs

  • 3 tbsp horlicks

  • 1 1/2 tbsp hot milk
  • 125g butter, softened
  • 250g icing sugar
  • 50g dark chocolate, melted
  • 1 packet maltesers

Method

  1. Preheat oven to 180C and grease and line to 20cm round sandwich tins.
  2. Measure the horlicks and cocoa powder. Pour over 2 tbsp water and mix to make a paste.
  3. Cream together the butter and sugar, then add the horlicks paste and gradually add the four eggs. Add the flour and baking powder.
  4. Divide evenly between the tins and bake for about 25 minutes. Allow to cool in the tins for 5 minutes then turn out onto a wire rack to cool completely.
  5. To make the icing, measure the horlicks into a bowl and add the hot milk. Mix until you have a smooth paste; you may need to add a ltitle more milk.
  6. Melt the chocolate and allow to cool slightly, then add the chocolate, butter, and icing sugar to the horlicks paste. Beat until light and fluffy.
  7. Place the icing in the fridge for about 15 minutes to make assembly easier.
  8. Spread one half of the cake with icing and sandwich with the remaining cake. Cover the top with icing and the sids too if there's enough icing. Decorate with maltesers and dust with icing sugar before serving.
