Chocolate Reindeer Cake

Ingredients

  • 110g softened unsalted butter
  • 110g caster sugar
  • 80g gf self-raising flour
  • 2 tsp xanthan gum
  • 1/2 tsp baking powder
  • 30g cocoa powder
  • 2 eggs
  • 40ml milk

Buttercream

  • 40g softened unsalted butter
  • 110g icing sugar
  • 1 tbsp cocoa powder
  • 1 tbsp milk

To decorate

  • Salted gf pretzels
  • Edible eyes
  • Red chocolate beans

Method

  1. Preheat the oven to 160c. Grease and line a circular Victoria sandwich cake tin.
  2. Place the butter and sugar in a large mixing bowl and whisk together until light and fluffy.
  3. Add the eggs and mi together.
  4. Beat in the flour, cocoa powder, baking powder and xanthan gum until fully combined. Add the milk and continue to mix until you have a smooth batter.
  5. Pour the batter into your prepared cake tin and smooth over with a spatula. Put in the oven and bake for 20 - 25 minutes until a toothpick comes out clean. Remove from the oven and leave to cool.
  6. Make the buttercream: put the butter, icing sugar and cocoa powder in a mixing bowl. Beat until light and fluffy, adding the milk halfway through.
  7. Decorate t look like a reindeer: carefully remove from tin and place on a plate. Put a large spoonful of buttercream on top and smooth it over the cake in a thin layer. Chill for 15 minutes then remove and add the rest of the buttercream. Cut into 6 slices and decorate each slice to look like a reindeer, using the pretzels for antlers, edible eyes, and red chocolate beans for the noses. Enjoy!

N.B. Joshy's 2nd birthday tractor cake was 3x cake recipes and 2x buttercream (which was just enough!). Piped with Betty Crocker vanilla buttercream style icing.
