Cinnamon Waffles

Ingredients

  • 15g soft light brown sugar
  • 150g GF plain flour
  • 1/2 tbsp baking powder
  • 1/4 tsp baking soda
  • 2 tsp xanthan gum
  • 1 tsp ground cinnamon
  • Pinch salt
  • 195ml milk
  • 45ml vegetable oil
  • 1 large egg

Method

  1. Crumble the brown sugar to remove all lumps and place in a medium mixing bowl with the flour, baking powder, xanthan gum, baking soda, cinnamon and salt. Mix well.
  2. Add the milk, oil, and eggs and whisk until blended and smooth (kitchenaid on a low setting).
  3. Leave the batter to rest for five minutes (do NOT skip this stage or the waffles won't rise). While the batter rests, switch the waffle maker on and close the lid.
  4. After five minutes and once the green light is illuminated, pour just under one standard ladleful (about 90ml) onto each waffle iron. Close the grid and lock the handle.
  5. Bake for a couple of minutes until the waffles are golden brown. They are probably done when they start to smell nice!
  6. Serve with maple syrup and fresh fruit.

Makes 4 normal waffles
