Ingredients
- Olive oil
- 1 onion
- 2 garlic cloves, crushed
- 400g tin chopped tomatoes
- 140g mascarpone
- 250g gnocchi
- Half bag baby spinach
- Italian herbs
- Parmesan, for serving
Method
- Heat the olive oil and fry the onion and garlic until golden, then add the tomatoes. Season, add the herbs, and leave to simmer for at least 10 minutes.
- Just before serving, stir through the mascarpone sauce and let simmer for 2 minutes more. Add the spinach and leave to wilt.
- Boil the gnocchi according to pack instructions. Drain, and then mix into the sauce. Serve immediately with parmesan cheese grated on top.
