Creamy Tomato Gnocchi

Ingredients

  • Olive oil
  • 1 onion
  • 2 garlic cloves, crushed
  • 400g tin chopped tomatoes
  • 140g mascarpone
  • 250g gnocchi
  • Half bag baby spinach
  • Italian herbs
  • Parmesan, for serving

Method

  1. Heat the olive oil and fry the onion and garlic until golden, then add the tomatoes. Season, add the herbs, and leave to simmer for at least 10 minutes.
  2. Just before serving, stir through the mascarpone sauce and let simmer for 2 minutes more. Add the spinach and leave to wilt.
  3. Boil the gnocchi according to pack instructions. Drain, and then mix into the sauce. Serve immediately with parmesan cheese grated on top.
