Crispy Parma Pork with Courgettes

Ingredients

  • 200g pork fillet
  • 40g cheddar cheese
  • 4 slices parma ham
  • Olive oil
  • Sage

  • 3 courgettes

  • 2 garlic cloves
  • Pinch of chilli

  • 2 packs cooked brown rice

Method

  1. Cut the pork into 4 even sized medallions and make a slit in the centre of each one. Cut the cheddar into four pieces and poke into the slits in the pork. Sprinkle with a little black pepper and sage; wrap in parma ham. Flatten with your fist and put into the frying pan with some oil. Turn regularly until golden and cooked through.
  2. Finely slice the courgettes in the food processor and add to the casserole pan with some oil. Add the finely chopped garlic and pinch of chilli flakes. Season to taste and cook until well softened and just before it starts to catch.
  3. Microwave the rice, and serve.
