Custard Creams

Ingredients

  • 175g butter
  • 50g caster sugar
  • 50g icing sugar
  • 2 egg yolks
  • 2 tsp custard powder
  • 1 tsp vanilla extract
  • 300g plain flour
  • Filling
  • 100g butter
  • 140g icing sugar
  • 2 tbsp custard powder
  • Yellow food colouring

Method

  1. Preheat oven to 180c and line baking sheets
  2. Cream together the butter and sugars; add the egg yolks and vanilla extract.
  3. Add the flour and custard powder and bring together to form a dough. Wrap in cling film and leave to cool for at least 30 mins.
  4. Roll out thinly on a floured surface and cut out. Transfer to a baking sheet and bake for 8-10 minutes until golden.
  5. To make the filling, mix the softened butter, icing sugar, custard powder and food colouring. Pipe onto the biscuits once they are completely cool; sandwich together. Dust with icing sugar.
