Custard Creams

Ingredients
- 175g butter
- 50g caster sugar
- 50g icing sugar
- 2 egg yolks
- 2 tsp custard powder
- 1 tsp vanilla extract
- 300g plain flour
- Filling
- 100g butter
- 140g icing sugar
- 2 tbsp custard powder
- Yellow food colouring
Method
- Preheat oven to 180c and line baking sheets
- Cream together the butter and sugars; add the egg yolks and vanilla extract.
- Add the flour and custard powder and bring together to form a dough. Wrap in cling film and leave to cool for at least 30 mins.
- Roll out thinly on a floured surface and cut out. Transfer to a baking sheet and bake for 8-10 minutes until golden.
- To make the filling, mix the softened butter, icing sugar, custard powder and food colouring. Pipe onto the biscuits once they are completely cool; sandwich together. Dust with icing sugar.
