English Pancakes

Ingredients

  • 50g plain flour
  • 1 egg
  • 150ml milk
  • Pinch salt
  • Lemon juice, caster sugar, jam, chocolate chips etc.

  • N.B Makes 4 full size pancakes (can be doubled if required).

Method

  1. Put the flour and a pinch of salt in a large mixing bowl and make a well in the centre. Crack the egg into the middle then pour in the milk.
  2. Whisk vigorously until thoroughly incorporated and completely smooth.
  3. Brush a frying pan with a little oil or butter. Pour in a ladleful of batter and cook for a couple of minutes. Flip when ready and cook the other side.
  4. Serve with chocolate chips and jam, or lemon and caster sugar.
