Easy Cheesecake Cookies

Ingredients
- 8 ounces mascarpone cheese or cream cheese, at room temp
- 56g unsalted butter, at room temp
- 2 eggs, room temp, beaten
- 1/2 tsp pure vanilla extract
- 1 (16 ounce) box cake mix
- 4 ounces chocolate chips
Method
- Preheat the oven to 180c. Line a baking sheet and set aside.
- In a large bowl, place the mascarpone or cream cheese, butter, eggs, and vanilla, and beat well with a mixer or by hand.
- Add the cake mix and mix by hand until just combined. The dough will be thick.
- Add the chocolate chips and mix until evenly distributed.
- Divide into portions of about 1 and 1/2 tablespoons each, or about 2 teaspoonsful for smaller cookies. Place on the baking sheet at least 1 inch apart. Flatten the mounds of dough into disks with wet hands and bake until the cookies are just beginning to brown on the underside and edges - about 14 minutes for large, or 10 minutes for small cookies.
- Allow to cool until set on the baking sheet before transferring to a wire rack to cool completely.
Variation - Brownie Cherry Cookies
1 box M&S brownie mix (instead of cake mix) topped up with gf vanilla sponge mix to get 450g total

100g chopped cherries
