Easy Cheesecake Cookies

Ingredients

  • 8 ounces mascarpone cheese or cream cheese, at room temp
  • 56g unsalted butter, at room temp
  • 2 eggs, room temp, beaten
  • 1/2 tsp pure vanilla extract
  • 1 (16 ounce) box cake mix
  • 4 ounces chocolate chips

Method

  1. Preheat the oven to 180c. Line a baking sheet and set aside.
  2. In a large bowl, place the mascarpone or cream cheese, butter, eggs, and vanilla, and beat well with a mixer or by hand.
  3. Add the cake mix and mix by hand until just combined. The dough will be thick.
  4. Add the chocolate chips and mix until evenly distributed.
  5. Divide into portions of about 1 and 1/2 tablespoons each, or about 2 teaspoonsful for smaller cookies. Place on the baking sheet at least 1 inch apart. Flatten the mounds of dough into disks with wet hands and bake until the cookies are just beginning to brown on the underside and edges - about 14 minutes for large, or 10 minutes for small cookies.
  6. Allow to cool until set on the baking sheet before transferring to a wire rack to cool completely.

Variation - Brownie Cherry Cookies

1 box M&S brownie mix (instead of cake mix) topped up with gf vanilla sponge mix to get 450g total 100g chocolate chips 100g chopped cherries
