Gigantes Plaki and Oregano Chicken

Ingredients

  • 2 tins butterbeans
  • 8 vine tomatoes
  • 1 tin chopped tomatoes
  • 1 red onion
  • 1 white onion
  • 2 garlic cloves
  • 2 tbsp tomato puree
  • 1 tsp sugar
  • 1 tsp dried oregano
  • 1/4 tsp ground cinnamon
  • Sprinkle parsley
  • Salt, pepper

  • 2 chicken breasts

  • Oregano; seasoning

Method

  1. Saute the onions and garlic until golden. Add the butter beans, tomato puree, vine tomatoes (roughly chopped), chopped tomatoes, and stir. Add the sugar, oregano, salt, pepper, and cinnamon. Cook on the hob for at least 20 minutes.
  2. Turn out into a casserole dish and bake in the oven for 30 minutes at 200C.
  3. Sprinkle the chicken with oregano and seasoning then flatten with a meat hammer. Place in an oven proof dish; sprinkle with extra oregano and some garlic oil. Bake with the beans until cooked through, about 20-30 minutes in a hot oven.
  4. Serve the beans with the baked chicken on top.
