Gooey Chocolate Chip Cookies

A soft, chewy / pillowy cookie with a good rise. Gooey in the middle.

Ingredients

  • 175g unsalted butter, softened
  • 150g light brown sugar
  • 50g caster sugar
  • 1 egg
  • 2 tsp. vanilla extract
  • 275g plain flour
  • 2 tsp. cornflour (heaped)
  • 1 tsp. bicarbonate of soda
  • ¼ tsp. salt
  • 275g chocolate chips; mixture of milk and white

Method

  1. Preheat the oven to 180°C.
  2. Cream together the butter and sugars until fluffy and light in colour. Add egg and vanilla and blend in.
  3. Mix in flour, cornflour, baking soda and salt. Stir in chocolate chunks. Using a standard-sized cookie scoop or tablespoon, drop dough onto a prepared baking sheet.
  4. Bake for 10 minutes, until barely golden brown around the edges. The tops will not brown, but do not cook longer than ten minutes.
  5. Let cool on the sheet for five minutes. Remove from baking sheet and let cool completely.
