Gooey Chocolate Chip Cookies

A soft, chewy / pillowy cookie with a good rise. Gooey in the middle.
Ingredients
- 175g unsalted butter, softened
- 150g light brown sugar
- 50g caster sugar
- 1 egg
- 2 tsp. vanilla extract
- 275g plain flour
- 2 tsp. cornflour (heaped)
- 1 tsp. bicarbonate of soda
- ¼ tsp. salt
- 275g chocolate chips; mixture of milk and white
Method
- Preheat the oven to 180°C.
- Cream together the butter and sugars until fluffy and light in colour. Add egg and vanilla and blend in.
- Mix in flour, cornflour, baking soda and salt. Stir in chocolate chunks. Using a standard-sized cookie scoop or tablespoon, drop dough onto a prepared baking sheet.
- Bake for 10 minutes, until barely golden brown around the edges. The tops will not brown, but do not cook longer than ten minutes.
- Let cool on the sheet for five minutes. Remove from baking sheet and let cool completely.
