Grandma Audrey’s Fruit Cake

Ingredients

  • 6 ounces soft margarine
  • 6 ounces light brown sugar
  • 9 ounces self-raising flour
  • 3 eggs
  • 12 ounces mixed fruit
  • 2 ounces glace cherries (washed then dried in flour)
  • 3 tablespoons marmalade

Method

  1. Line an 8 inch tin and preheat the oven to 150c.
  2. Cream together the margarine and sugar. Add the eggs and beat until fluffy, then add the marmalade. Add the flour, mixed fruit, cherries and marmalade and stir through by hand. [N.B don’t be tempted to add more marmalade, or the cake will sink in the middle)
  3. Cook for about 1 hour 15 minutes.
