Grandma Audrey’s Fruit Cake

Ingredients
- 6 ounces soft margarine
 
- 6 ounces light brown sugar
 
- 9 ounces self-raising flour
 
- 3 eggs
 
- 12 ounces mixed fruit
 
- 2 ounces glace cherries (washed then dried in flour)
 
- 3 tablespoons marmalade
 
Method
- Line an 8 inch tin and preheat the oven to 150c.
 
- Cream together the margarine and sugar. Add the eggs and beat until fluffy, then add the marmalade. Add the flour, mixed fruit, cherries and marmalade and stir through by hand. [N.B don’t be tempted to add more marmalade, or the cake will sink in the middle)
 
- Cook for about 1 hour 15 minutes.
