Greek Vegetable Kebabs

Ingredients

  • Garlic oil
  • 100g halloumi cheese
  • 1 yellow pepper
  • 1 courgette
  • Handful / small pack cherry tomatoes
  • 1 carrot
  • 1 red onion

  • 150g brown rice

  • Spinach, parsley

Method

  1. Chop all the veg into thin slices or cubes.
  2. Carefully thread onto kebab skewers.
  3. Drizzle with garlic oil.
  4. Cook the brown rice - about 25 mins.
  5. Preheat the grill. The kebabs take about 15 minutes to cook. Adjust heat as necessary to be cooked through in time with the rice. Stir spinach and parsley through the rice before serving.
