Ham and Kale Soup

Ingredients

  • 1 large onion
  • Garlic oil
  • 2 garlic cloves
  • 1.5 litres chicken stock (2 cubes)
  • 1 tin chick peas
  • 200g shredded Wiltshire ham
  • 1 tin chopped tomatoes
  • 100g pasta
  • 150g kale
  • Parmesan, to serve

Method

  1. Heat saucepan with garlic oil. Chop onion (chunky is nice) and sauté for about 10 minutes. Finely chop and add the garlic while the onion cooks.
  2. Prepare and add 1.5 litres chicken stock made with two chicken stock cubes. Add a tin of chopped tomatoes, a tin of chickpeas (or other beans) and the ham, finely shredded. Cook for about an hour on low.
  3. About half an hour before serving, add the pasta and kale. Stir will.
  4. Serve with fresh parmesan shavings.
