Ham Stock Soup

Ingredients

  • 2 portions ham stock
  • 1 tin chopped tomatoes
  • 4 or 5 carrots
  • 2 leeks
  • 2 packs butternut squash
  • Handful of cooked ham
  • 1 tin cannellini beans
  • 1 tin chick peas
  • Half a mug of mini pasta

Method

  1. Start heating the stock; add the chopped tomatoes and stir.
  2. Dice the carrots and squash roughly. Thinly slice the leek. Add all vegetables and stir. Can also add sweet potato / onion / celery depending on what is available.
  3. Thoroughly rinse the beans; add and stir. Add the chopped ham.
  4. Simmer for a couple of hours. Add more water if the taste is too strong. About half an hour before serving, add the pasta. Check the seasoning.
