Honey Garlic Chicken

Ingredients
- 2 chicken breasts
- Salad onions
- Brown rice
- Chicken stock cube
- Peas

Soy sauce

1/2 cup plain flour
- 1/2 tsp thyme
- 1/2 tsp oregano
- 1/4 tsp paprika
- Pinch cayenne pepper
- Salt, pepper

1 large egg, beaten

1/4 cup honey
- 2 cloves garlic, chopped
- 1 tsbp soy sauce
- 1/2 tbsp cornflour
Method
- Use a meat hammer to flatten the chicken breasts.
- Combine the plain flour and herbs in a large bowl. Beat the egg in a separate bowl.
- Dredge the chicken breasts first in the flour, then the egg, then the flour mixture again, then place in a frying pan drizzled with a little garlic oil.
- Meanwhile cook half a mug of brown rice with 2 mugs water and 1 chicken stock cube- about 35 minutes.
- To make the honey sauce, combine the honey, garlic, and soy sauce. Combine the cornflour with a drop of water and stir. Add to the honey / soy sauce; simmer for about 2 minutes or until thickened.
- Fry the chicken for about 5 minutes a side until golden and crispy. You might need more oil.
- Serve with a garnish of salad onions and some microwaved frozen peas.
N.B the sauce is very sweet; a drizzle would be ample. Consider using less honey next time or adjusting the quantities.
