Jamie's Sausage Pasta

Ingredients

  • 4 spring onions
  • 2 carrots
  • 2 sticks celery
  • 1 pack sausages (400g) (Tesco finest pork)
  • 1 teaspoon oregano
  • 2 cloves garlic
  • 3 tablespoons balsamic vinegar
  • 400g tin chopped tomatoes
  • Optional: 2 or 3 baby courgettes
  • Few sprigs of basil

  • 200g wholewheat penne

Method

  1. Peel and roughly chop the carrots, celery, and spring onions. Place in the food processor and blitz. Add the sausages and oregano and pulse until well mixed.
  2. Add to a hot frying pan (the wok is the right size) and fry until cooked through and starting to turn golden. Use a wooden spoon to break it up as you go so that it looks approximately like beef mince.
  3. Add the garlic, balsamic vinegar, and tinned tomatoes. Add courgette if using. Turn the heat down and simmer.
  4. Meanwhile boil a pan of salted water for the pasta. Add the penne and cook for about 10 minutes or until al dente. Add about a wineglass worth of the cooking water into the pasta sauce and stir in the basil.
  5. Drain the pasta (reserving a little extra water) and return to the pan. Add half the sauce and stir. Check the consistency and seasoning and adjust if necessary. Serve with parmesan cheese and extra basil.

This makes 4 portions of sauce (2 dinners for 2 people).
