Madeleines

Ingredients

  • 2 eggs
  • 100g caster sugar
  • 100g plain flour
  • 1 tbsp honey
  • ¾ tsp baking powder
  • 100g butter, melted and cooled slightly
  • A little extra butter and flour

Method

  1. Whisk together the eggs and the sugar in a bowl until pale and frothy; about 5 minutes. Carefully pour in the melted butter, plain flour, honey, and baking powder. Whisk lightly by hand and leave to stand for 20 minutes.
  2. Preheat the oven to 200C.
  3. Brush the madeleine tray with melted butter then shake in a little flour to coat. Tap out the excess.
  4. Spoon a little batter into each hole in the madeleine tray. Be very careful not to overfill otherwise they will bake into each other.
  5. Bake until well risen and golden; about 8-10 minutes depending on size. 8 minutes was plenty for large madeleines; if baking smaller ones next time, watch carefully.
  6. Transfer to a wire rack and leave to cool slightly; these are best enjoyed warm or on the same day of cooking.
