Madeleines

Ingredients
- 2 eggs
- 100g caster sugar
- 100g plain flour
- 1 tbsp honey
- ¾ tsp baking powder
- 100g butter, melted and cooled slightly
- A little extra butter and flour
Method
- Whisk together the eggs and the sugar in a bowl until pale and frothy; about 5 minutes. Carefully pour in the melted butter, plain flour, honey, and baking powder. Whisk lightly by hand and leave to stand for 20 minutes.
- Preheat the oven to 200C.
- Brush the madeleine tray with melted butter then shake in a little flour to coat. Tap out the excess.
- Spoon a little batter into each hole in the madeleine tray. Be very careful not to overfill otherwise they will bake into each other.
- Bake until well risen and golden; about 8-10 minutes depending on size. 8 minutes was plenty for large madeleines; if baking smaller ones next time, watch carefully.
- Transfer to a wire rack and leave to cool slightly; these are best enjoyed warm or on the same day of cooking.
