Turkey with Marsala Cream Sauce

Ingredients
- 2 turkey breast steaks
- 45ml / 3 tbsp plain flour
- Olive oil
- 25g butter
- Dash lemon juice
- 60ml dry marsala
- 60ml double cream

150g brown rice
- Sugar snap peas
Method
- Put the rice on to cook.
- Place each turkey steak between two sheets of cling film, and use a meat hammer to flatten it.
- Put the flour in a shallow bowl. Season the flour then coat the meat.
- Heat the oil and butter in a deep frying pan, until sizzling. Add the turkey and saute for a few minutes on each side until crispy, tender,and cooked through. Remove the turkey.
- Lower the heat. Mix the lemon juice and marsala together, add to the pan and raise the heat. Bring to the boil, stirring in any sediment, then add the cream. Simmer, stirring constantly, until the sauce is reduced and glossy. Check the seasoning. Add the turkey back to the pan
- Serve the turkey with the sauce alongside, with brown rice and sugar snap peas.
