Mary's Double Chocolate Chip Cookies

Ingredients

  • 75g softened butter
  • 75g golden caster sugar
  • 75g light muscovado or light brown sugar
  • 1/2 tsp vanilla
  • 1 egg
  • 150g GF self-raising flour
  • 1/2 tsp xanthan gum
  • 25g cocoa powder
  • 125g chocolate chips (half white, half milk)

  • N.B Peanut butter chips also work well.

Method

  1. Preheat oven to 180c. Line oven trays with baking paper.
  2. Beat the butter, sugar, and vanilla together until light and fluffy. Add the egg and beat until well combined.
  3. Switch to a spatula; add the flour, xanthan gum and cocoa powder. Fold together. Once most of the flour is incorporated, add the chocolate chips and fold until evenly distributed.
  4. Line two baking trays. Spoon out the cookie dough in tablespoon sized mounds; flatten the tops a little. Makes 16 small or 12 medium size cookies.
  5. Chill for at least 15 minutes.
  6. Preheat oven to 160C and bake for 13 minutes until golden brown (16mins if making larger ones). Leave to cool on the baking tray for 10 minutes before transferring to a wire rack to cool.

N.B for a vanilla version, try omitting the cocoa powder and adding the equivalent amount of flour instead.
