Ingredients
Method
- Preheat oven to 180c. Line oven trays with baking paper.
- Beat the butter, sugar, and vanilla together until light and fluffy. Add the egg and beat until well combined.
- Switch to a spatula; add the flour, xanthan gum and cocoa powder. Fold together. Once most of the flour is incorporated, add the chocolate chips and fold until evenly distributed.
- Line two baking trays. Spoon out the cookie dough in tablespoon sized mounds; flatten the tops a little. Makes 16 small or 12 medium size cookies.
- Chill for at least 15 minutes.
- Preheat oven to 160C and bake for 13 minutes until golden brown (16mins if making larger ones). Leave to cool on the baking tray for 10 minutes before transferring to a wire rack to cool.
N.B for a vanilla version, try omitting the cocoa powder and adding the equivalent amount of flour instead.
