Monster Cookies

Ingredients

  • 115g salted butter, room temperature
  • 100g light brown sugar
  • 50g caster sugar
  • 185g creamy peanut butter
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 160g plain flour
  • 40g oats
  • 150g M&Ms
  • 90g chocolate chips

Method

  1. Preheat the oven to 180C. Line baking sheets with parchment.
  2. In a large bowl, cream together the butter and sugar until light and fluffy. Then add in the peanut butter and vanilla; mix until well combined. Finally add the egg and mix well.
  3. Switch to a wooden spoon and add the baking soda and flour. As it starts to come together add the oats, then fold in the M&Ms and chocolate chips.
  4. Optional: chill the dough for 30 minutes if too soft to use.
  5. Roll balls of dough, 1 generous / heaped tablespoon per ball, and place on the baking sheet. Press a couple of extra M&Ms on top for an attractive finish. Bake for 10 minutes and allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

Makes about 20 large cookies.
