Mystery Chicken & Potato Wedges

Ingredients

  • 2 chicken breasts
  • Parma ham
  • Strong cheddar cheese

  • 3 or 4 jacket potatoes

  • Garlic oil
  • Grated parmesan cheese
  • Paprika, smoked paprika
  • Salt, pepper

  • Beans / vegetables

Method

  1. Wash the jacket potatoes and cook for about 30 minutes – let them cool.
  2. Slice each partially cooked potato in half, and then into four to get appropriately sized potato wedges. Mix together the garlic oil, cheese, paprika, salt and pepper. Dip each potato wedge in the mixture, ensuring you pick up the cheese. Place on a baking tray.
  3. Flatten the chicken using a meat hammer, then wrap in parma ham and put sliced or grated cheese on top. Place in an ovenproof dish.
  4. Cook the potatoes at 200c for approx. 30-40 minutes depending on how crispy you want the potato wedges. The chicken will take about 30 minutes but depends on the size of the chicken breasts.
