Olive Breaded Chicken

Ingredients

  • 2 chicken breasts
  • 75g wholemeal breadcrumbs, roughly torn
  • 2 heaped tbsp sun-dried tomato puree
  • 2 tbsp water
  • 25g black olives, sliced
  • Fresh basil

  • 1 tin cannelinni beans

  • 1 tbsp oil
  • Basil
  • Salt, pepper
  • Paprika (?)

Method

  1. Preheat the oven to 200C. Place the chicken in a roasting dish.
  2. Mix the breadcrumbs, tomato puree, water, olives, and basil. Press onto the chicken firmly then bake for 25 minutes. Before eating, check the chikcen is cooked through with no pink meat.
  3. Serve with cannelinni beans and sweetcorn.

N.B Original recipe suggestion: roughly crush the cannelinni beans, add the basil and oil, then heat for 2 minutes in the microwave.

Beans slightly dry; next time puree in food processor first or simmer in vegetable stock.
