Parma Ham and Red Pepper Spaghetti

Ingredients

  • 1 onion
  • 1 red pepper
  • 90g parma ham
  • 1 large tomato
  • Fresh parsley
  • 200g spaghetti
  • Salt, pepper
  • Parmesan cheese

Method

  1. Finely slice the onion, pepper, and half the parma ham. Quarter the tomato, ct out the seeds, and finely dice the flesh. Finely chop the parsley.
  2. Put the finely sliced parma ham into a large dry frying pan over a high heat and cook for 5 minutes, until crispy. Transfer to kitchen towel to drain.
  3. Cook the sppaghetti in a large pan of boiling water until al dente.
  4. Meanwhile, return the frying pan to a medium high heat with the oil, and add the onion, pepper and tomato. Cook for a minute or so. Roughly slice the remaining parma ham and add to the pan. Stir in most of the parsley leaves and season lightly with salt and pepper.
  5. Add a little of the cooking water to the sauce then drain the pasta and add it to the sauce along with the a good grating of parmesan cheese. Toss well over the heat until glossy.
  6. Divide between plates, and sprinkle with crispy parma ham, parsley, and parmesan cheese.
