Pasta Alla Norma

Ingredients

  • 1 onion
  • 1 garlic clove
  • 1 aubergine
  • 200g cherry tomatoes
  • 1 tin chopped tomatoes
  • Salt, pepper
  • Fresh basil
  • Parmesan cheese
  • 175g wholewheat pasta
  • 125g mozzarella

Method

  1. Saute the onion and garlic for about 5 minutes then add the aubergine (diced into chunks about 2cm) then saute for a further 5-10 minutes until starting to turn golden. Add the cherry tomatoes.
  2. Add the chopped tomatoes, basil, and seasonings. Turn down the heat and simmer for at least 15 minutes.
  3. Cook the pasta for 10 minutes; drain and add to the sauce. Remove from the heat and stir in the mozzarella.
  4. Serve with extra basil leaves and parmesan cheese.
