Pasta Alla Norma

Ingredients
- 1 onion
- 1 garlic clove
- 1 aubergine
- 200g cherry tomatoes
- 1 tin chopped tomatoes
- Salt, pepper
- Fresh basil
- Parmesan cheese
- 175g wholewheat pasta
- 125g mozzarella
Method
- Saute the onion and garlic for about 5 minutes then add the aubergine (diced into chunks about 2cm) then saute for a further 5-10 minutes until starting to turn golden. Add the cherry tomatoes.
- Add the chopped tomatoes, basil, and seasonings. Turn down the heat and simmer for at least 15 minutes.
- Cook the pasta for 10 minutes; drain and add to the sauce. Remove from the heat and stir in the mozzarella.
- Serve with extra basil leaves and parmesan cheese.
