Peanut Butter Cookies

Ingredients
- 250g unsalted butter
- 200g dark brown sugar
- 270g caster sugar
- 1 tsp vanilla
- 170g peanut butter
- 2 large or 3 medium eggs
- 140g peanut butter chips
- Optional extra choc chips
- 340g self-raising flour
- 85g strong white bread flour
- 2 tsp bicarbonate of soda
- 150g porridge oats
- Extra 35g bread flour if needed to adjust texture.
Method
- Cream together butter, sugar and vanilla. Add the peanut butter and eggs.
- Stir through the chips, flours, bicarbonate of soda and porridge oats until well combined.
- Place in round teaspoons on a baking tray. Flatten slightly with forks in a criss-cross pattern. Bake at 180C for 8 minutes.
