Peanut Butter Cookies

Ingredients

  • 250g unsalted butter
  • 200g dark brown sugar
  • 270g caster sugar
  • 1 tsp vanilla
  • 170g peanut butter
  • 2 large or 3 medium eggs
  • 140g peanut butter chips
  • Optional extra choc chips
  • 340g self-raising flour
  • 85g strong white bread flour
  • 2 tsp bicarbonate of soda
  • 150g porridge oats
  • Extra 35g bread flour if needed to adjust texture.

Method

  1. Cream together butter, sugar and vanilla. Add the peanut butter and eggs.
  2. Stir through the chips, flours, bicarbonate of soda and porridge oats until well combined.
  3. Place in round teaspoons on a baking tray. Flatten slightly with forks in a criss-cross pattern. Bake at 180C for 8 minutes.
