Pizza Cous Cous

Ingredients

  • 100g giant wholewheat cous cous
  • 1 onion
  • 1 garlic clove
  • 1 courgette
  • Salt, pepper
  • 1 jar pizza sauce
  • 1 to 2 tsp capers
  • Fresh basil
  • Mozzarella/cheddar cheese mix
  • Parmesan cheese

Method

  1. Preheat the oven to 200C. Place an oven-proof dish for the cous cous in the oven to preheat.
  2. Bring a pan of water to the boil. Once boiling, add the cous cous and boil for 8 minutes; drain in a colander.
  3. Meanwhile, chop and saute the onion, then add the courgette and garlic clove. Other vegetables can be added e.g. celery. Saute until golden, then add the pizza sauce, capers, a little salt and pepper, and plenty of fresh basil.
  4. Stir the drained, cooked cous cous into the sauce. Pour the mix into the pre-heated oven proof dish, and top with a scattering of cheeses. A mix of mozzarella, cheddar, and a tiny grating of parmesan worked well. Bake in the hot oven for about 10 minutes until the cheese has melted and started to go golden.
