Pork Chops in Cider Gravy

Ingredients

  • 2 Pork Chops
  • 2 Sweet Potatoes, peeled and cut into chunks
  • 1 Red Onion, cut into wedges
  • 1 Garlic Bulb, broken into unpeeled cloves
  • 2 Bay Leaves
  • 200 ml Dry Cider
  • 2 tbsp onion chutney
  • Organic Broccoli or Steamed Cabbage
  • N.B sweet potato can be substituted for butternut squash and or potatoes (quartered)

Method

  1. Preheat the oven to 200°C. Place the pork chops in a large ovenproof dish with the sweet potatoes, red onion, garlic and bay leaves.
  2. Pour over the cider, cover with foil and bake for 20 minutes.
  3. Remove the foil and bake for a further 30 minutes, until the pork is nicely browned and completely cooked through with no pink meat.
  4. Using a slotted spoon, lift the pork and vegetables onto 2 plates. Stir the chutney into the pan juices, spoon onto the plates and serve with steamed cabbage or broccoli.
