Pork Chops in Cider Gravy

Ingredients
- 2 Pork Chops
- 2 Sweet Potatoes, peeled and cut into chunks
- 1 Red Onion, cut into wedges
- 1 Garlic Bulb, broken into unpeeled cloves
- 2 Bay Leaves
- 200 ml Dry Cider
- 2 tbsp onion chutney
- Organic Broccoli or Steamed Cabbage
- N.B sweet potato can be substituted for butternut squash and or potatoes (quartered)
Method
- Preheat the oven to 200°C. Place the pork chops in a large ovenproof dish with the sweet potatoes, red onion, garlic and bay leaves.
- Pour over the cider, cover with foil and bake for 20 minutes.
- Remove the foil and bake for a further 30 minutes, until the pork is nicely browned and completely cooked through with no pink meat.
- Using a slotted spoon, lift the pork and vegetables onto 2 plates. Stir the chutney into the pan juices, spoon onto the plates and serve with steamed cabbage or broccoli.
